Depending on the season and how your charcoal grill is set up, your experience cooking and grilling will likely be very different from ours.

In our high-heat searing tests, Weber delivered the best balance of seared exterior and medium-rare interior steak. The Weber kettle grill gave us tasty chicken too, with crispy chicken skin. If you prefer meat that’s more well done, you can extend the cooking time, or sear and finish cooking in an oven. They’re bulkier, the assembly is more involved and you’ll likely need more fuel to keep the larger space at a high temperature. Our results, however, were almost as good as with the kettle-style Weber, so if you’re interested in a cart-style charcoal BBQ, this is your best bet. In our medium, indirect-heat chicken tests, the Nexgrill delivered flavorful, juicy meat as a close second to the Weber. And this updated model, when we used the charcoal snake method, demonstrated temperature control almost as good as the Weber.

You mainly control the temperature on this grill from the bottom vent. This grill gave both our burgers and chicken a really nice sear. During our testing, hamburgers cooked to medium, while it took the chicken about 32 minutes to come up to temperature. The key to using the Q 1400 successfully is to wait a sufficient amount of time for the grill to come to temperature. Once you do, the 189 square inches of cooking space can handle the grilling needs of anywhere from one person to four or more—depending on what you’re cooking up.

There’s nothing quite like the simple pleasure of cooking over charcoal on a nice grill like this. If you’ve never cooked with charcoal before, the Original Kettle is an excellent grill for discovering this style of barbecue. portable bbq When it comes to cleaning the lid and bowl, burning charcoal and cooking food will cause carbon to accumulate on them. This is normal, and if you’ve used charcoal before, you’ve seen it; it looks like peeling paint.

Where-as with the Slow N’ Sear Kettle you essentially get everything you need to smoke with. The lid thermometer and the exhaust damper are placed on opposite sides. It almost feels like the legs aren’t made flush to fit well into their holes. This results in you getting upset – or in my case mad – inevitably scratching the legs slightly near their base (not capable of being seen). The short of it is – the Weber Kettle is what I believe to be one of the best grills and even smokers to exist, especially at a fair price-point. We didn’t have a charcoal starter on hand this time around, so we used some firestarter gel from Hasty-Bake. It doesn’t evaporate quickly like traditional lighter fluid and doesn’t give your meat that gross lighter fluid taste. Once the victuals were hot and sizzling, they were eagerly placed inside soft Wonder Bread buns, slathered with ketchup and all the other fixins, and devoured with gusto. At a certain moment, Dad would decide that the charcoal was ready for cooking. On would go the grate, and an assortment of burger patties, hot dogs, and sausages were laid upon this culinary altar.
